French Cuisine
The French are famed for their haute cuisine which most gourmets can agree on is world class. The influences of the neighbouring nations of Spain, Italy and Germany in particular on food in France is something that goes back many centuries, yet the French have perfected each dish creating their own culinary delights in the process.
France is blessed not only with a long Atlantic coastline that has a heavy influence on the seafood traditions of coastal towns but also has a diverse interior, from where a host of unique local ingredients make their influence felt on the culinary arts. For food is an art form in France being the home of global culinary institutions such as Le Cordon Bleu and the internationally acclaimed Michelin Star which is the origin of measuring restaurant excellence worldwide.
There are many French specialities much of which stem from centuries ago served in palaces to the nobility that already enjoyed tarte tatin, a pastry in which the fruit is caramelized in butter and sugar before the tart is baked. Think of French food, and we immediately conjure up an image of beautifully presented, creamy bisque which is a glorious seafood soup of lobster or crab, or perhaps a canard à l’orange from the bourgeoise cuisine consisting of a roast duck with a bigarade sauce served with potato gratin and legumes on the side.
